Bringing his signature “Garden-to-Sea Immersion” philosophy to the Maldives for the very first time, Chef Servetto transformed the iconic underwater venue into a stage for conscious gastronomy and immersive storytelling. Set 6.8 metres beneath the Indian Ocean and surrounded by vibrant marine life, guests indulged in an exclusive five-course dining experience rooted in circular cuisine, zero-waste precision, and sustainably sourced island ingredients. Developed alongside the resort’s culinary team, the menus celebrated hydroponic greens, locally sourced produce, and fresh catches from the Indian Ocean, creating a refined expression of flavour, sustainability, and innovation beneath the waves.
